Lambda Carrageenan Powder non-gelling, high viscosity and cold-soluble. Ideal for instant whipped creams or milk shakes. Works well in combination with TSPP. Lambda is also freeze-thaw stable and shear reversible.

Use lactic acid directly as the acidulant. You will also require Lambda carrageenan to thicken the cream.
