Sodium Nitrite (preservative 250, E250)
Sodium nitrite, with chemical formula NaNO2, is used as a color fixative and preservative in meats and fish. When pure, it is a white to slight yellowish crystalline powder. It's very soluble in water and is hydroscopic. It's also slowly oxidized by oxygen in the air to sodium nitrate, NaNO3. Sodium nitrite also has been used in human and veterinary medicine as a vasodilator, a bronchodilator, an intestinal relaxant or a laxative, and an antidote for cyanide poisoning.
Sodium Nitrite is an ingredient in the following products:
Meat Cure #1 - Pink Salt (meats that will be cooked) This cure blend consists of salt , sodium nitrite and in some cases a pink or red colour to differentiate it from standard salt. The nitrite keeps the meat safe for a short period of time, and retains the natural red meat color. This is used in products that are made and then cooked and eaten quickly like fresh sausages.
Meat Cure #2 - AKA Prague Powder 2 (meats that will be dry cured and NOT cooked)
This cure is a mixture of salt, sodium nitrate and sodium nitrite. It is only used on items that are dry cured over an extended period of time (salami, cured meats). The sodium nitrate in this blend breaks down over time to sodium nitrite which in turn is broken down to nitric oxide. The nitric oxide is an oxidizing agent which is required to keep the meat safe.
Please do not interchange cure #1 and cure #2 they will not work and lead to serious health problems.
