Ammonium Bicarbonate (food grade) is a mineral salt (E503). One of the best bakery improvers around use of this product results in baked goods that have a an light, airy, crispy, and fluffy texture. The activation occurs when it is added to the dough and starts to warm, heat being the catalyst that starts the reaction. This reaction releases water, carbon dioxide and ammonia gas causing the goods to rise. It is very important only to bake goods that will result in minimal remaining water content, such as biscuits. Ammonium Bicarbonate is not suitable for use in cakes or sponges due to the high remaining water content. This product is popular with older European customers working with biscuit recipes handed down over the generations.
