Don't know what the dutch process means in relation to chocolate?
This soaking process was invented by the Dutch very early. As they did not share the technique it was known as the mysterous Dutch process, this has carried onto today. The soaking process lowers the acidity which results in a darker cocoa powder and mellows the flavour. This results in a stronger chocolate flavour and richer colour.
