Egg Albumen is used in many areas of health and food production as a source of protein (min 80%). Egg Albumen is used in Modernist cuisine as a pure source of protein. Powdered egg whites are much easier to use in the kitchen, no fuss and the best thing is they require no refrigeration. Egg white powder is quite often used in making macarons but it also has many other baking and confectionary applications.

The technical process for manufacturing the egg Albumen includes the following steps:
1. Shell eggs breaking - only Hen eggs are used.
2. Liquid eggs filtering and clarifying
3. Drying (Spray Drying)
4. Sieving and metal detection
5. Packaging, pasteurizing and storing
What is the ratio used to rehydrate our Egg Albumen powder?
100g of Egg Albumen powder dissolved in 700ml of water corresponds to approximately 800g of fresh hen egg whites (25 shells)
