Clear Maltose Liquid DE (49.5). This maltose liquid is manufactured by a natural enzymatic (Amylase) action on organic starch. The starch of choice is rice starch but other starches may be used. The result is a disaccharide (composed of two mono saccharides) liquid. Maltose Liquid is water soluble, clear, colourless viscous liquid. Some maltose liquids that are high in dextrose will have a darker brown colour.
This viscous liquid can be thinned by placing in a water bath during the colder months. This viscosity can be used to create interesting shapes which can be air dried and used in presentation.
