Pink Salt (Cure #2) Powder 100g
Sodium Nitrite (6.25%), Sodium Nitrate (1%), Sodium Chloride, Red Fermented Rice Colour
Why do we add a natural pink colour to our curing salt (meat preservative)?
The reason for the pink colour is to help it blend with the meat and more importantly to prevent this product being confused with common table salt. We use a natural pink colour rather than a synthetic red such as ponceau.
Uses for this product:
Cure 2 is specifically formulated to be used only for dry cured products (eg pepperoni, hard salami, genoa salami, proscuitti hams, capicola. These products will not undergo any further cooking or smoking. The addition of the sodium nitrate is so over time it can breakdown into sodium nitrite and then to nitric oxide. This process can continue for up to 6 months. This product is blended to order to ensure a high performance outcome, sometimes this may lead to a delay in dispatch.
