Honey Honey Honey

The Melbourne Food Depot this week were able to spin (extract the honey in a simple certrifudge) a number of frames full of our local East Brunswick honey. The bees sure have been busy collecting pollen and necter from our local East Brunswick neighbourhood.

This time of the year it is necessay to check the hive on a weekly basis. The capped frames full of honey are shown in below photograph. This top layer of wax is known as the cap. This cap must be removed by using a hot knife to allow the honey to be extracted. Two frames at a time are placed in the manual extractor and the handle turned.



After spinning the fames the filtered honey looks lovely.



With delicate citrus notes and a righ golden colour, I don't think I've ever tasted anything quite as delicous.
