Natural Colours, uses & limitations

At the Melbourne Food Depot Lab we have been experimenting with Natural Colours for a quite some time. Natural colours unlike their synthetic cousins fade on exposure to heat and UV light. Over the time I think we have tested, blended and retested natural colours from all the major manufacturers around the world. It seems not one has a complete range that will do the job. What we have ended up doing is cherry picking the best colours from these manufacturers. Below is a  small list of the colours we have available in powder form.

Tumeric Extract (Curcumax) replaces Tartrazine
Charmine Extract replaces Ponceau 4R
Carbon Black 2kinds replaces Black PN
