A very bright red fine fluffy pigment powder. Ponceau Lake (E124) is mainly used for colouring chocolate and other foods as well as cosmetics or pharma applications. The best thing about lakes is they are ideal for colouring products with very low moisture availability. An example of this would be fondant colouring or other oil based bakery applications.
