Tartaric Acid (E334) occurs naturally in wine lees and is used solo in the manufacture of many foods or as an ingredient in other products. Some of these products include baking powder, cream of tartar, effervescent beverages and fruit esters.
Tartaric Acid can be used in many food applications. Some of these include the following
Confectionery
Any confectionery with a sour taste most likely has tartaric acid as one of its components involved in its production. The tartaric acid maybe used in conjunction with citric acid or malic acid. The use of all these acids add a complex flavour profile to the confectionery. This is carried out to cover the vast consumer taste profiles.
Tartness
Used in pastry applications to cut through the sweetness. By removing some of the sweetness and providing a contrast in flavour it can actually increase the overall flavour of the product. Examples of this would be custards, pectin jellies or in a liquid medium cordials.
Color Preservation
Tartaric being a highly water soluble weak organic acid will also act as an antioxidant. An antioxidant will prevent oxidation of the product and thereby trap all the flavour and colour of the product. The visual aspect to food is very important as people eat with their eyes.
