HM Pectin Citrus Rapid Set

This rapid set pectin exibits a firm, short structure with excellent flavour release. This makes it perfect for high sugar jams, please note this pectin is not thermoreversible. Optimal operation is acheived in an environment with a pH of 3.2. This pectins degree of Esterification is 65.6%

When changing or substituting pectins out of your process, MFD recommends carrying out bench test prior to a production run. This is the first pectin introduced into the MFD range in over a decade. This pectin will become part of MFD's standard offering.
