The pectin used in the Macaron Tower with Kalamata Olive, Beetroot and Raspberry Macarons by Adriano Zumbo on masterchef Australia. This is also used in the Pear Perfection dish featured in the final of junior masterchef. Pectin NH was used in the raspberry gel layer of the Zumbo Wedding cake in Masterchef the professionals.
The Tech Info on Pectin NH:
A low methylester amidated Pectin, standardised with polyphosphate, calcium citrate and dextrose for easily repeatable results.
