THERMFLO® modified food starch
THERMFLO® is a modified food starch white to off-white powder derived from waxy maize. It is an extremely versatile product that is especially applicable in high and low pH food systems where exceptional tolerance to heat and shear is required. This product is often used in fruit fillings and glazes, puddings, custards and cream pie fillings, gravies and sauces.
THERMFLO® is a modified food starch that contributes a smooth, short texture, heavy body to both high and low pH systems. This starch is perfectly suited for processing under conditions of high temperature. The end products exhibit exceptional stability including aseptically canned foods along with frozen foods. This product is seen as a suitable replacement for the discontinued clearjel canning starch.
ClearJel, Instant ClearJel and Thermflo canning starches.
It has been described by canning organisations as a suitable alternative to use in canned applications including pie fillings, because it is also stable during heating and exhibits the same viscosity during heating as regular Clearjel. It also has the added advantage of holding up well during storage. This canning organisation strongly recommends against using the instant Clearjel starch for canning. It does not exhibt the same properties as the discontinued Clearjel.
