What is the difference between your regular Xanthan Gum 200 and your Xanthan Gum 80?
The numbers refer to the mesh size of the powder. Mesh size is a measure of how fine the powder is, therefore the 200 is superfine and the 80 is more course. If this is not a problem for your application use it as you will save some dollars.
Are both the Xanthan gums produced the same way and are gluten free?
Yes, both the same production method, fermentation and they are gluten free.
Will I use the same amount of this new Xanthan Gum 80 in my applications?
A recommended starting point would be 0.1% but as the mesh size is larger it may take longer to hydrate. If you are swapping over some experimentation maybe required.
