EXPANDEX® Modified tapioca starch for use in baking applications. Specifically designed to aid in substrate expansion during the baking process. Develops products with better internal textures and a crunchy outer layer. This product does not contain gluten from wheat, oats, rye or barley.
What does EXPANDEX® actually do?
It enhances the flavour, texture and overall appearence of gluten free baked products.
Enhances and improves the texture and snap of thin baked goods for example gluten free cookies and crackers.
Reduces the amount of vegetable gums normally associated with gluten free baking.
Has been noted to extend shelf like and stability of gluten free products.
How much EXPANDEX® should I use?
This is the big question. It really depends on what you are baking and the texture you are trying to acheive. There are many recommendations online but I suggest you stick with the advice in your gluten free baking chat groups.
