Fumaric acid (E297) is generally used in beverages and baking as a substitute for tartaric acid and sometimes citric acid. Fumaric acid is a non toxic food acidulent (acidity regulator). It is also used in confectionery to add sourness to the product.

Maximum Sour30 December 2017Learned about fumaric on a trip to Madrid, a bar guy was using it. It was what was adding the sour notes to my cocktail. Finally got our of him it was mixed with malic, citric and tartaric. Small use rate been experimenting in combo with the other powders. Getting their so will continue.
