Licorice concentrated juice (solid) 50g

This product is made from the root of the licorice bush. This solid concentrated licorice juice may be broken up by a sharp wack or grated with a micro plane. As the flavour is so intense only a small amount is required. The concentrate can also be returned to liquid by boiling with a small amount of water, this takes patience and practice. Pastry chefs have found the easiest way to use this product is with a micro plane. The intense black colour combined with its texture and flavour can really lift a desert. To understand this products flavour profile we recommend you taste a very small amount prior to use.
