Ultra Tex 4 is a cold water swelling modified food starch manufactured from maize in the USA by National Starch. The various numbers after the name denote the source of the starch and the modification that has taken place. For example Ultra Tex 3 is the same modification but the starch comes from tapiocia rather than corn.
Ultra Tex 4 is used in instant food preparations, pastry fillings, sauces and dressings. The ability to create instant sauces from any liquid in a cold environment, with a rich smooth mouth feel, is gaining great popularity from Chefs worldwide. These sauces can then be dried to form sauce sheets.
