Turning Fats & Oils into Powders?
This maltodextrin is a cheaper tapioca based product with DE 10 that makes an excellent starting point. Being manufactured from Tapioca it is from the same base product as Zorbit but has a higher bulk density than Zorbit so it will not function the same. If your application does not call for the high functionality of Zorbit you can save some money and try this one. Expect some slight sand/grit feeling in the mouth as the powder reconstitutes into liquid. This grity feel does not happen with the higher priced Zorbit.
The end product can be toasted in a dry pan on low heat to add another textural element. Some chefs have commented that it behaves very much like other products they have tried and are very happy with it. The best thing to do is try it in your application and see the results.
