This product was used by Zumbo for the Hansel and Gretel House challenge in masterchef season 3. It is also used in many feature recipes in Zumbos' cookbook. Yellow Pectin is a slowish set non-reversible gelling agent for Fruit Pastes or Fruit Jellies (Pates de Fruits). The product you wish to set must be rich in sugars (more than 76%)and have a pH between 3.2 and 3.5. The dosage or use ratio is approx 1.2%
