Gellan Gum Powder (High Acyl) 20g
As used on Masterchef Australia
Kelcogel® LT100 is fine mesh, high acyl gellan, which forms soft, elastic, non-brittle gels. Soluble in hot water and has a set temperature of 70º-80ºC.
Our High Acyl Gellan gum has found increased usage in plant based liquids for example Almond Milk and other nut based milks.
This is the true High Acyl gellan gum, we have seen some shockers from China that claim to be gellan gum. Our simple testing procedure knocks these ones out when compaired to the known samples. High acyl gellan gum forms soft, very elastic, non-brittle gels. Varying the ratios of the two forms of gellan produces a wide variety of textures.
