Gellan gum has the cleanest flavour with a very small use ratio. It also works over the entire pH range, slices cleanly and withstands temperatures of 90 degrees C. Used to make a water gels. Whereas other gelling agents supply viscosity gellan gum supplies a solid gel. Kelcogel is a clarified, low acyl gellan gum product that produces firm, brittle texture gels with excellent thermal stability. People use it as a starch replacement. Heat to 85 degrees C then allow to cool to achieve the gelifying effect. Eli Bulli uses this gum to make a saffron tagliatelle and strawberry spaghetti.
KELCOGEL® gellan gum is a polysaccharide produced by fermentation of a pure culture of Sphingomonas elodea. The composition and structure of gellan gum produced by commercial fermentation is identical to the naturally occurring polysaccharide formed by Sphingomonas elodea on Lily pads. Gellan gum is also branded by a few suppliers as Nanogel-TC, Grovgel, AppliedGel, Phytagel and Gelrite MFD only sells KELCOGEL® F Gellan Gum.
The Two Styles of Gellan
- Low acyl gellan produces firm hard, non-elastic, brittle gels
- High acyl gellan forms soft, very elastic, non-brittle gels.

Varying the ratios of the two forms of gellan produces a wide variety of textures.
Shearing during cooling
Shearing disrupts the normal gelation of gellan gum (both high acy land low acyl forms) and results in a smooth, homogenous, pourable structured liquid or ‘fluid gel’. This type of system is extremely pseudoplastic and highly efficient at suspending a wide variety of solids and liquids, including emulsified oil droplets, herbs, fruit pulp and cocoa.

Ingredients in this drink are toffee, hot buttered toast, custard, cherry tart, and turkey. The recipe starts by infusing a cherry tart in milk for 8 hours, then strain out all the solids. Repeat with all ingredients. The secret ingredient is Gellan Gum. Gellan keeps all flavors separated. If you wish to maintain a single colour add it to every flavour layer. It also presents the chance to have a traffic light effect with different colours on every layer.
